The humble chicken egg is the hero ingredient in many of our favourite dishes like omelettes, frittatas, quiches, shakshuka, tamagoyaki (Japanese eggrolls), Turkish eggs, custard, cakes and more.

(Sheesh. Now we're hungry.)

Fun fact: The word 'yolk' comes from the Old English word for 'yellow'. Sometimes, a hen will release two yolks in the same shell, creating a double-yolked egg!

How to keep your eggs fresher for longer

Refrigerate immediately

Put the eggs inside the fridge (not the door) for a consistent temperature.

Keep in original carton

The box protects your eggs against damage and odours and makes it easy to see the best-by date.

Don't wash the eggs

Washing eggs removes the coating of the shell that protects it against bacteria.

Large end up

Store eggs with the pointy side down and the large end up to balance the yolk in the centre.

Discard cracked eggs

Never eat eggs with cracks in the shell because it could allow bacteria to enter.

Refrigerate leftover eggs

Put leftover raw or cooked eggs in an airtight container and refrigerate immediately.

How to check if your eggs are fresh

Place your egg in a bowl or glass of cold water. If the egg sinks to the bottom, it's fresh. If it floats to the top, it's spoiled. If it's somewhere in the middle, it's no longer fresh and should best be discarded.
